About the Wine

Founded in 1840, Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Preuses. It is a traditional Chablis winery amongst the oldest in the area. Bought by Maison Louis Latour in 2003, today the estate is led by Paul Espitalié who managed to inspire a new dynamic while keeping its independence by running it as a separate enterprise with its own house style.

Nowadays Simonnet-Febvre produces a wide range of wines expressing the different terroirs of Chablis. Maison Simonnet-Febvre's style is asserted with the same conviction throughout the whole range of wines, from our famous Saint-Bris to our outstanding Chablis Grand Cru "Les Clos".

Louis Latour stands out among its competitors as it controls every aspect of production from grape to bottle. The winery operates its own vineyard, nursery, forests for oak sourcing of their barrels, printing shop, and even unique bottle shape.

Today, Maison Latour operates 25 family-owned and managed companies around the world. The winery produces wine from 140 appellations. The winery also owns and operates Maison Simmoney-Febve in Chablis and Maison Henry Fessy, which remarkably produces wines in nine out of ten Cru Beaujolais. The winery also produces white wine in the Ardeche (near Cotes du Rhone) and Pinot Noir at Dom. de Valmolsinne in Southern France.

In the US, Louis Latour operates as its own importer, cutting out the middleman, which mirrors BHW's own cost-efficiency.

Jean Charles Thomas has been the winemaker at Louis Latour for 32 years. Prior to that, he apprenticed with Jean Pierre Jobard for more than 10 years. Jean Charles is widely considered one of the finest winemakers in the world, with unrivaled experience and expertise with Chardonnay and Pinot Noir in Premier Cru and Grand Cru vineyards. During his tenure at Louis Latour, he has produced more than 40 wines rated 95+.

This vineyard is situated on the left bank of the Serein river, and has an ideal southwesterly aspect. The soils of the left bank are less clay-like than those of the right bank. This wine is one of the most highly-rated left-bank Chablis.

Aging: 12 months in stainless steel vats, on the lees.

Tasting Notes: 100% Chardonnay. It is an excellent example of the characteristics of a Chablis wine: freshness, acidity, minerality, and notes of flowers and fruit. Well-rounded and charming, this wine has a final note of minerality on the palate and is a good compromise between the acidity and fruit. It is generous, has a good length, and is very typical of Chablis.
