In 1996 David Ramey alongside his wife, Carla, founded the now heralded Napa Valley estate, Ramey. Prior to establishing one of the finest wineries in the United States, David spent time working for the Moueix family at the illustrious Château Pétrus. He also played a prominent role in establishing a number of wineries that have become household names (Matanzas Creek, Chalk Hill, Dominus, & Rudd Estate). Today Ramey shares the spotlight alongside its triumphant leader and has been one of the leading producers in California winemaking since it was founded. David earned a graduate degree from UC Davis in 1979. His thesis on volatile ester hydrolysis (translation: how aromas evolve in wine) is still used today to understand the complex nature of wine maturation. Over the years, David has helped pioneer traditional, artisan winemaking techniques in California. His efforts have helped shape the way many wines in the United States are made today, including native yeast fermentation; harvesting fully mature fruit; eliminating acidification of red wines, and bottling without filtration.

David’s groundbreaking work with indigenous yeasts, sur lies aging, whole-cluster pressing, and malolactic and barrel fermentation yielded a new California style that was richer, lusher, and silky smooth than previously known. As a result, he created a benchmark style now emulated by many.

The 2015 Cabernet Sauvignon is a blend of 78% Cabernet Sauvignon, 12% Merlot, 7% Malbec, and 3% Petit Verdot. Medium to deep ruby, it has an incredible nose of licorice, dried flowers, and mint chocolate over blackberries and black cherries, cedar shavings and pencil lead, plus spicy clove and star anise touches. Medium to full-bodied, it floods the mouth with plush flavor layers wrapped in chocolate-textured, pixelated tannins and great freshness to counter, finishing long and luscious. ~93 Wine Advocate 

Features a dense core of cherry paste and plum fruit, laced with a range of blood orange, plum pit, grilled savory, and chalk notes. Tightly focused, with the fruit remerging steadily through the finish. Will cellar well. Best from 2021 through 2034. ~93 Wine Spectator 

The 2015 Cabernet Sauvignon comes from a hot, sunny vintage yet has a pure, classy character. Notes of crème de cassis, tobacco, leafy herbs, and spring flowers are just some of the aromatics and it’s medium-bodied, elegant, and incredibly polished on the palate.
