They begin picking at 2:00 AM in the morning to ensure the fruit arrives cool and fresh. The grapes were fermented with native yeasts in a spontaneous fermentation. The aromatics on this wine are astounding. Varietally correct and quintessentially pinot, the wine is light bodied and a light red-pink in color. But don’t be fooled, the aromas and elegance carry through in the mouth and a lovely finish. The grapes derive from four different pinot noir clones, including Pommard. This pinot noir has a wonderful youthfulness about it that develops into a voluptuous mouth feel with fine tannins. Small choice parcels in the neighboring villages of Sermier and Eceuil augment the production.

While the Grande Marques easily have production in the millions of bottles, Lallement's vineyards support a mere 50,000 bottles per year. It is only after spending nearly 5 years on the lees that the wines disgorged and released. This level of aging is 2 years longer than the requirement for vintage Champagne and similar to many houses' tetes-du cuvée. Pascal Lallement not only walks the walk but he also talks the talk. He is an active spokesman for the village of Chambery and for farmer made wines. Part of the appeal of Lallement is his involvement in oeno-tourism which began in 1996. He welcomes guests to his village with tours of his caves, meals paired with Champagne and rides through the vineyards in his custom 'winetrain'. He feels that by demonstrating what goes into the wines from his quaint village his guests can better understand the relationship of the place to the wines that come from Chamery.

//cdn.shopify.com/s/files/1/0150/0646/products/pascal-lallement-champagne-brut-1er-cru-chamery-1.jpg?v=1606005814
la-cosecha-riserva-sherry-vinegar-de-jerez-10-years-old
La Cosecha Riserva Sherry Vinegar de Jerez 10 years old

About the Wine

Many of the world's foremost culinary experts agree that vinegar produced from pure sherry wine in Jerez de la Frontera is of unequaled excellence for salads and cooking purposes.

These vinegars are in short supply - for only occasionally does a barrel of Oloroso choose a different path. Chile’s long, narrow, coastal geography has made the transportation of wines challenging over the centuries, though today it is a major exporter. To the west is the Pacific Ocean, to the east are the Andes. But the isolation has also meant that Chile vineyards have so far never been attacked by phylloxera, meaning that unlike viticulturalists in many other part of the world, Chilean vineyards can be planted with original rootstock, saving producers the laborious job of grafting vines onto phylloxera-resistant rootstocks. Chile started an appellation system in 1994, and there are five regions each with numerous sub-regions. This pioneering woman developed the reputation of sparkling wines from Burgundy far beyond the region's borders. Anne Marie Ninot was born in Rully in 1859 in the heart of the Burgundy wine-growing regions. 20 years later she was married to a Parisian banker, Antoine Emile Ambal. She will follow him in Paris and they will have two children. At her husband's death, Marie returned to her native village of Rully, where her brother still lived. He was an owner and merchant of Burgundy wines. This time saw the beginnings of the champagne method. Marie was interested in it and decided to create her own Maison in 1898. To begin with, she produced both red and white high-quality champagne-method sparkling wines. In 1929 happened the first transmission to her Grandson Charles Roux. He ran the company up until his death in 1988 before it was passed on to his grandson Eric Piffaut. Today, the company is run by her descendant, Eric Piffaut. His son, Aurélien, is also involved in the business. Together, they use their expertise and knowledge to continue the family tradition of producing high-quality wines. As a result of the success of its wines, a production site was built in 2005, near to the Beaune region and the A6 motorway. The brand new Veuve Ambal winery is large, ultramodern facility equipped with the latest and greatest, state-of-the-art vinification tools and robotics which allow the winery to maintain a very high level of quality.

***Free Shipping on 12 or More Bottles of this Wine***

//cdn.shopify.com/s/files/1/0150/0646/products/1_4dbbe855-f5c9-4bb5-8504-8d35e55f93be.jpg?v=1605977612
2017-formiga-de-seda-priorat-blanco-spain
2017 Formiga de Seda Priorat Blanco Spain

About the Wine

Are you interested and curious to armchair travel to NE Spain, about two hours west of Barcelona.
