About the Wine

Brunello is always a favorite, but 2015 (alongside 2016) are considered the region’s best vintages ever, and wine lovers and collectors are clamoring to fill their wine racks and cellars with these lauded Tuscan bottles. The longer the bottles from these vintages are on the market, the scarcer they’ll become. We all know scarcity drives up the price, so NOW is the time to secure the critically acclaimed 2015 Brunello di Montalcino.

When it comes to deciding whether or not to buy wines from the vintage, James Suckling makes the decision easy for you when he says, "The 2015 vintage is a historical year for Brunello di Montalcino that nobody should miss. The wines show impressive precision of vivid fruit, fine tannins, and freshness in acidity despite their ripeness and richness which makes them some of the most exciting in years."

Meet Simone, the heart and soul of Cava d’Onice. His love for wine started when he followed his father through the cellars and began learning the art of vine cultivation at just 14 years old. Despite starting small, this family-run winery has grown over the years, gaining worldwide recognition and acclaim.

Cava d’Onice's story is one of determination and passion. In the early '80s, Simone's father, Valter Nannetti, purchased the "Colombaio" farm, which included a small vineyard of just 2000 square meters. What started with a single vineyard and a mere 266 bottles has now become an esteemed winery known for its dedication to crafting exceptional Brunello di Montalcino.

In 2005, Simone and his wife expanded their horizons by renting a small vineyard, marking the birth of the renowned Cava d’Onice Brunello. The name pays homage to the Etruscan onyx quarry in Castelnuovo dell’Abate.

The vineyards of Cava d’Onice are a blend of rich heritage and the beauty of nature.

These main vineyards, located near the Basilica dell’Osservanza, are surrounded by historic wineries that have played a big role in the history of Brunello di Montalcino. Some well-known names like Tenuta Il Poggione and Castello Banfi are among them.

Aging: 3 years in Slavonian and French oak barrels.

Tasting Notes: 100% Sangiovese. It offers an intense aroma with hints of red ripe fruit like plum and blueberry, mingling with complex mineral and balsamic notes. On the palate, it's beautifully balanced with a solid, harmonious body. The tannins blend seamlessly with other elements, leaving a long-lasting finish. It pairs wonderfully with dishes like pappardelle di lepre, risotto, game stews, braised meats, and aged cheeses.

Reviews

Pure energy in this exciting red with notes of red flowers, cedar, grapefruit juice, and lime. The sensorial complexity is beautiful and takes advantage of the presence of fresh ginger which gives intensity and precision to the matrix. What quality fruit in the center of the palate shows ripe and dense tannins in the structure and a solid, concentrated and performing finish. Excellence made in Montalcino. Better from 2022. ~97 WinesCritic.com

This is a beautiful Brunello with tulips, rose petals, freshly squeezed oranges, terracotta and lemon peel. Sleek and tightly wound on the medium-to-full-bodied palate, the driven red fruit doing the work, and the bright complexion of acidity shining through. Structured and intricately detailed. Drink from 2025. ~96 James Suckling

The Cava d'Onice 2015 Brunello di Montalcino Sensis is a dark and fleshed-out steak wine that shows a dense core of fruit framed by those standard Sangiovese-driven aromas of tilled earth, leather, and tobacco. I feel like the bouquet is not fully focused, as those aromas sort of fall into place in random order. But if you like powerful, full-throttle Brunello, this is your wine. ~91 Robert Parker's Wine Advocate

Layered and sun-kissed aromatics of baked fig, tobacco, licorice, and sweet baking spice are found in the 2015 Sensis Brunello di Montalcino. It carries its Mediterranean feel to the palate with dried herbs, black plum, and orange peel. Offering ample fruit and a gripping tannic structure, it will be hearty drinking 2021-2031. ~90 Jeb Dunnuck
