A complex and seductive bouquet with layers of ripe blackberry, blueberry and plums fruits laced with earth and clay mineral scents, barrel spices and a complexity that can only come from the vision and synergies delivered by a great winemaker (go Adam). As the wine opens out a gentle layers of mint and eucalypt start to emerge, these are very quietly spoken. Also, a mix of barrel spice and sweetness scents of raw sugar, vanilla and clove. Overall youthful, powerful and concentrated. Delicious on the palate, taut and youthful exacting and precise, also with a core of ripe red berry fruits and plum flavours, sweet tobacco and baking spice layers. Tannins are abundant, fine, long chain and ripe; acidity adds backbone and freshness. Finally, there’s a sense of place with stony clay-like quality and taste adding more complexity. With 8 years of bottle age at the time of tasting, this offers a glimpse of the trajectory of Aussie Cabs. There're secondary characters of coffee, truffles, dried mint and potpourri, the still-primary cherry fruit tucked beneath. What's remarkable is how fresh the palate still is.
