For generations, the winemakers of San Michele have guarded a sacred bond with this land, treating the rolling hills outside Verona not just as a place of work, but as a living canvas of history.

The story of this wine is an exercise in profound patience and artistic devotion. It begins in the early autumn when grape selection becomes an act of poetry—only the most flawless, perfectly sun-ripened bunches are chosen by hand. Instead of being pressed, these grapes are carefully laid onto single-layer wooden trays and carried into airy fruit chambers. Here, they rest undisturbed for four long months. As the autumn chill turns to winter, the grapes undergo a ancient transformation known as appassimento. Exposed only to the gentle breezes of the valley, the water slowly evaporates, concentrating the very essence, character, and spirit of the harvest.

What follows is a quiet, four-year slumber deep within the cellar. The wine is patiently guided through two years in fine oak barriques and tonneaux, followed by an additional two years in grand, fifty-hectoliter oak barrels. This long, four-year journey from vine to bottle is a testament to a winemaking philosophy that values craftsmanship over speed.
