Bibi Graetz did not just enter the world of wine; he staged a creative coup. Born into a family of artists at the medieval Castello di Vincigliata, Bibi swapped his paintbrush for ancient vines, releasing his first vintage in 2000 with zero formal training and a total disdain for convention. Today, he isn't just a winemaker—he is a visionary iconoclast who has redefined the Italian landscape.

Colore is the absolute apex of the Bibi Graetz pyramid. It is the ultimate expression of his dream and the rarest jewel in his crown. While Testamatta is his celebrated icon, Colore is the legendary "selection of the selection," born only from the most exceptional barrels of the entire production. What began as a mythical micro-lot of 600 bottles has evolved into one of the world's most sought-after fine wines. As the legendary critic Jane Anson declared in her 100-point review, Colore is "jewel-like... so distinctive and so unlike many other Super Tuscans."

This is 100% Sangiovese taken to its most extreme and sublime form. Sourced from the oldest, most prestigious pre-phylloxera-style vineyards in Tuscany—some reaching 135 years of age—the fruit is a miracle of survival. These vines are rooted in the poorest, most punishing galestro soils of Lamole, Vincigliata, and Siena, where high altitudes and stony earth force the grapes to produce a wine of haunting intensity and "ancient taste." The dedication is obsessive: each vineyard is harvested up to eight separate times to ensure every single berry is captured at the precise moment of perfection.

The 2021 vintage is nothing short of a masterpiece—a benchmark year that James Suckling (99 pts) describes as an "explosion of the senses." It balances raw power with a "weightless concentration," offering a sensory journey of violets, wild cherries, and blood orange. Fermented with indigenous yeasts in open-top barriques, it is a wine that defies the laws of physics, delivering a "mineral spine" and "silky tannins" that linger forever.

Wrapped in Bibi’s own hand-painted artwork, Colore is more than a Super Tuscan; it is the pinnacle of liquid art. This is the costliest, scarcest, and most profound effort from Italy’s most creative mind—a wine that doesn't just represent Tuscany, it transcends it.

Tasting Notes

Deep magenta-ruby, almost luminous in the glass. The nose is a thing of beauty — raspberry coulis, Morello cherry, rose oil, and dried violets, followed by layers of cinnamon toast, Sichuan pepper, and a breath of underbrush.

This is unmistakably Sangiovese, but Sangiovese at a level of precision most producers never reach. On the palate the wine is full-bodied but weightless in feel — silken, lifted, and perfectly defined, with wild berry fruit saturating the mid-palate and brisk acidity threading through to a finish of extraordinary length.

Fine-grained tannins add structural tension without the slightest astringency. Hints of licorice and sour cranberry emerge on the close. Best after 2028; will drink beautifully through 2040+. Decant for at least two hours if opening now.

Critical Reviews

The heart of the old vines for Colore (50% or more in most vintages) come from the highest village in Chianti, Lamole, up at 600m, and it’s this location, combined with Bibi Graetz’s intuitive, handsoff winemaking style, that make this wine so distinctive, and so unlike many other Super Tuscans. Jewel-like is how I always describe this particular bottle, hoping to convey its translucent ruby colour, and its fragrant, delicate and juicy depiction of freshly cut herbs, soft spices, red berry fruits studded with mandarin, grapefruit, slate, lemongrass and fresh tobacco leaf. Seductive and layered, the 2021 Colore is also entirely Sangiovese, coming from 100-year-old vines. It pours a rich magenta/ruby hue and reveals pure and luxurious aromas of black cherry liqueur, fresh lavender, polished leather, cedar, and sweet sage. Medium to full-bodied, it’s chiseled and well-defined, with refined, plush tannins, harmonious depth, and an extraordinarily long finish that slowly tapers. From one of my personal favorite vintages comes the Bibi Graetz 2021 Colore. This Sangiovese-based wine offers vertical intensity, energy and remarkable freshness. It also shows a polished quality to the palate that translates into a long, finely tuned finish. The totally stunning 2021 ‘Colore’ utilizes Sangiovese vines that are more than 70 years old and is mostly sourced from a cooler, high elevation site located in Lamole. Utterly fabulous after two hours in the decanter, this yields dazzling potpourri notes that mingle well with fresh orange blossom, white pepper, smoked pork shoulder and rich dark fig aromas. The palate is very soft and savory with refined tannins providing ample structure. The sense of weight and underlying poise really guides this beautiful bottling that could benefit from another year or two in the bottle. Hauntingly dark and alluring, the 2021 Colore entices with a blend of dusty violets and lavender, giving way to dried blueberries and sweet smoke. It washes across the palate with textures of pure silk, finessed and lifted in feel, with depths of tart wild berry fruit that saturate. Brisk acidity adds balance, and hints of licorice form toward the close. While firm, the 2021’s tannins are crunchy and crisp, adding structural tension without taking away from its undeniably pretty persona. This finishes with outstanding length and a sour cranberry tinge that puckers the cheeks. The future is bright, but patience is required. The 2021s from Bibi Graetz marry the balanced warmth of the vintage with the estate's new style of purity and lift, resulting in two wines that show the prettier side of Sangiovese. Dark ruby red with shimmering reflections. On the nose ripe cherries, wild berries, then floral with roses, subtle earthy savouriness. On the palate grippy, with very young tannin and vivid acidity, medium-bodied, unfortunately becomes a bit loose-knit in the back, quite brittle in the finish. ~ 92 Falstaff
