About the Wine

“White peach, lime pith, salted almond, lemongrass, flint, and white pepper on the nose. It’s full-bodied with bright acidity and flavorful, oily layers. Drink now. ~91 Points, James Suckling.

The history of the Ciavolich family is an example of perseverance through hard times. This family began their dream driven by the harsh circumstances in which they found themselves when in 1560 they had to flee from Bulgaria due to the Saracen invasions, and that's how they arrived in Italy.

The winery was built in 1853 under the direction of Francesco Ciavolich. This beautiful winery today is one of the oldest and most acclaimed in the entire Abruzzo region.

Ciavolich is an estate full of history, passion, and courage. Since its inception back in 1853, the love of the land and wine has been transmitted from generation to generation. Ciavolich's philosophy is to keep intact an agricultural, wine, and historical heritage.

Located in a wine paradise, to the west of the Adriatic Sea and to the east of Maiella, Ciavolich’s vineyards are placed on clay and silt loam soils. The soil conditions plus the perfect weather allow the ideal development of the vine. Years have passed and the winery continues to grow. This family estate began to expand to the regions of Montepulciano, Trebbiano, and Cococciola.

2020 Ciavolich 'Aries' Pecorino Colline Pascaresi IGT is a beautiful and vibrant wine made in a conscious and careful way where the harvest is 100% manual. This wine is the perfect pairing for Italian cuisine and seafood.

Tasting Notes: 100% Pecorino. Herbal scents such as rosemary, thyme, sage, and peppermint go along with hints of yellow pulp fruit. High acidity with a lovely minerality. Pair this wine with gnocchi with asparagus, bacon and crispy breadcrumbs, chitarrina with broad beans, beans, and Farindola Pecorino cheese, and seafood risotto.
