About the Wine

Les Hauts de Milly is produced by the outstanding and well-established artisanal Chablis producer Domaine Bernard Defaix. Back in 1959, Bernard and Monique Defaix kicked things off with just 2 hectares of vineyard glory. Fast forward to today, and these folks have gone all out, owning a whopping 27 hectares in Chablis and 6 hectares in Rully (that's the Cote de Chalonnaise).

Now, here's where it gets interesting. Since the late '90s, the family business has been handed down to the dynamic duo, Sylvain and Didier Defaix. Didier is in charge of the vineyard, where he follows organic practices, and has been certified since 2009, while Sylvain is the mastermind behind the vinification and aging process. But where's the magic happening, you ask? Well, it's all going down in the charming village of Milly, a stone's throw away from Chablis itself. The wines here are impeccably made and showcase the deep limestone soils that have made Chablis world famous.
