Slow wine is the ultimate indulgence, and this Cabernet Sauvignon is a masterpiece of patience. The wine is the product of an exhaustive search for the finest Cabernet grapes. After three years, the perfect fruit was discovered in the Home Ranch vineyard. Subsequent to a meticulous two-year aging process in oak barrels, this beautifully balanced wine emerged, characterized by its smooth and rich taste.

"Ovis," which means sheep in Latin, is named in honor of the sheep that are key to Clay Shannon's eco-friendly farming. These sheep graze on the vineyard’s cover crops, reducing the need for herbicides, pesticides, and fertilizers. Clay Shannon says, "This blend comes from our top vineyard plots, carefully farmed for maximum flavor and richness. The deep garnet color, lovely aromas, and smooth tannins are a clear sign of its High Valley roots."

Aging: 2 years in French oak barrels.

Dried fruits, black currants, toasted hazelnuts, and dark chocolate mingle with savory herbs, aged leather, dried cherries, and the subtle caress of French oak.

Critical Reviews

This wine is complex, concentrated, with aromas of dark berries, citrus, florals, and black tea on the nose. The flavors on the palate are the boysenberry, cassis, dark chocolate, bay leaf, and a juicy, dry finish. Decant and drink until 2034 pair with Rib Eye Steak ~95 Wine Enthusiast

Shannon Ridge Family of Wines is a large producer with extensive land holdings in the North Coast zone of California. There are a number of sub-brands within the portfolio. Cabernet Sauvignon (or blends), Pinot Noir, Zinfandel are the red grapes which feature most often. Chardonnay and Sauvignon Blanc are the principal white wine grapes.

Clay Shannon set up Shannon Ranches vineyard management company in 1993. Three years later he established his first 80 acre (32ha) parcel on the Lake County property known as Home Ranch. This lies between 2100 and 2400 feet (640-730m) on volcanic soils. It benefits from cool winds off Clear Lake and the mountains to the north.

The business now farms around 1000 acres (250 hectares) of estate vineyards. Around 3000 acres of additional vineyards are farmed under management contracts. Of this, two thirds lie in the Sacramento Valley, with the remainder split between Lake County and Napa Valley.

In the early years of the business the fruit was sold off. Nowadays around half the fruit is used for estate wines, with the remainder purchased by wines in Napa and Sonoma counties.
