About the Wine
Shannon Winery is a place where tradition meets innovation, where the rugged spirit of the land intertwines with the artistry of winemaking. Founder Clay Shannon, a true maverick, embarked on a journey in 1996 that would redefine winemaking. His determination to cultivate exceptional fruit in harmony with nature led to the creation of the Shannon Family of Wines. With over 2,000 acres of organic, breathtaking mountain property, where over 1,000 are planted with vines, the Shannon Family of Wines stands as a testament to commitment and creativity.
At Shannon Family of Wines, the commitment to the environment isn't just a phase, it's a lifestyle that’s impregnated into every aspect of the family’s operations. The accolades, including the California Green Medal Environment Award, stand as proof of their unwavering dedication. The winery is Sustainable Certified, and they’re on their way to becoming one of the largest Certified Organic mountain-grown vineyards in the U.S.
Slow wine is the ultimate indulgence, and this Cabernet Sauvignon is a masterpiece of patience. The wine is the product of an exhaustive search for the finest Cabernet grapes. After three years, the perfect fruit was discovered in the Home Ranch vineyard. Subsequent to a meticulous two-year aging process in oak barrels, this beautifully balanced wine emerged, characterized by its smooth and rich taste.
"Ovis," which means sheep in Latin, is named in honor of the sheep that are key to Clay Shannon's eco-friendly farming. These sheep graze on the vineyard’s cover crops, reducing the need for herbicides, pesticides, and fertilizers. Clay Shannon says, "This blend comes from our top vineyard plots, carefully farmed for maximum flavor and richness. The deep garnet color, lovely aromas, and smooth tannins are a clear sign of its High Valley roots."
Aging: 2 years in French oak barrels.
Tasting Notes

Dried fruits, black currants, toasted hazelnuts, and dark chocolate mingle with savory herbs, aged leather, dried cherries, and the subtle caress of French oak.
Critical Reviews
This wine is complex, concentrated, with aromas of dark berries, citrus, florals, and black tea on the nose. The flavors on the palate are the boysenberry, cassis, dark chocolate, bay leaf, and a juicy, dry finish. Decant and drink until 2034 pair with Rib Eye Steak ~95 Wine Enthusiast
