About The Wine

De Toren sits at the heart of Stellenbosch, South Africa's red-wine nerve center — steep slopes, clay-rich soils, and the cooling Atlantic Zephyr breeze that keeps the fruit poised instead of blown-out.

The estate became the country's first gravity-fed cellar, a technical flex that's now table stakes but was visionary when they built it. They set out to reinterpret Bordeaux on South African ground, and the Z is the proof they pulled it off.

The 2017 Z is a mostly-Merlot blend from high-clay, ocean-facing vineyards — the kind of cool-climate fruit that gives Bordeaux its structure without the Bordeaux price tag. The name comes from that Zephyr breeze: the ocean air-conditioning that keeps acidity intact through hot summers.

This is the 15-year anniversary bottling, a merging of art, innovation, and science using Bordeaux's five noble varieties.

Twelve months in a climate-controlled barrel room at 16°C and 80% humidity, a combination of new, second, and third-fill French oak.

The result is a wine that coats the palate with dark berry fruit, dried thyme, black cherry confit, and a creamy, softly tannic finish. Dusty crushed granite, cedar wood spice, wet tobacco leaves, dried violets — the aromatics are rich and layered. Medium to full-bodied, with juicy black cherries, soft herbal essences, and a broad, long-lingering finish.

Decant an hour before you pull the cork. Serve it cool — 15 to 18 degrees Celsius — and pair it with anything from spicy lamb to duck to rich fish. The acidity and weight make it versatile enough to handle heat and fat without folding.

Medium to full-bodied, the wine shows a balanced structure, with hints of reduction across the mid-palate that will allow this wine to age well past its 10th birthday.
