About The Wine

Cimento is releasing its inaugural wines from estate vineyards in the Walla Walla Rocks District, and the early critical response has been immediate: Jeb Dunnuck awarded the 2023 vintage Syrah a perfect 100 points, calling it "Cote Rotie-esque" in its refinement. Sean Sullivan of Northwest Wine Report wrote that Cimento is "clearly reaching for the brass ring and, in its inaugural releases, already grasping it firmly in hand." Todd Alexander serves as winemaker, and this is the kind of debut that changes the conversation about Washington wine.

This Cabernet Sauvignon comes from the San Tomasso Vineyard in the Rocks District — the same cobblestone-soiled terroir that gives the estate Syrah its savory, mineral-driven intensity. The iconic stones retain heat and impart an iron-rich character that rivals the Northern Rhone in Syrah and brings a distinctly Old World backbone to Cabernet.

The 2021 vintage began with a June heat dome that brought three weeks of extreme temperatures. The early timing meant no compromised fruit, and once the heat broke, the season turned warm and even, with ideal September ripening weather. The result: fruit that held remarkable acidity and freshness despite the heat, with wines showing both depth and supple texture. The Cabernet was aged in 70% new French oak.

The wine shows tobacco leaf and dark currants on the nose alongside shades of coffee grounds and black licorice. Round and generous on the palate with mouth-watering acidity and a beautiful vein of wet gravel. Very Pauillac-like, medium to full-bodied, showing wonderful freshness. Notes of gamey meats, cassis, black currant, baking spice, fresh herbs, and dried flowers unfold with time.

Stone Valley is an apt name for both the vineyard's soil composition and the wine's minerality. It begins with a power punch of blackcurrants mixed with cinnamon, saline and pencil lead.
