About the Wine
Clos Pascal is a rare jewel from the Côte Chalonnaise in southern Burgundy. A monopole vineyard that's the epitome of exclusivity. Owned and meticulously managed by Domaine du Cellier aux Moines, this tiny, almost half-acre plot is the heart of Givry. Only 1,000 bottles were produced in 2022, and we were lucky enough to snag just 180 bottles for the U.S. This is as rare and exclusive as it gets.

The estate itself is legendary. Built by Cistercian monks in the 11th century, Cellier aux Moines is now under the visionary guidance of Philippe Pascal, former CEO of LVMH. After an extensive renovation, the estate is now state-of-the-art yet holds the spirit of its rich past. It’s also the first certified organic and biodynamic estate in Givry.
The winemaking? World-class. Under the watch of Guillaume Marko, a man who’s worked at the Domaine de la Romanée-Conti, the wines here don’t just meet expectations—they exceed them. Marko's commitment to the vineyard’s soul, combined with biodynamic practices, ensures this wine is as much about respect for nature as it is about excellence in the glass.
With their sights set on Burgundy’s top-tier wines, they’ve already acquired Premier Cru plots in Santenay, Chassagne-Montrachet, and Puligny-Montrachet, plus a stunning plot in Mercurey. Tasting Notes
100% Pinot Noir. Clos Pascal bursts with intensity from the first sip. It’s a bold, yet elegant Pinot Noir that strikes a perfect balance between vibrant red fruit and earthy depth. Expect layers of fresh cherry, wild raspberry, and a hint of blackberry, intertwined with a subtle smoky minerality that whispers of its unique terroir. The wine’s silky texture caresses the palate, leading into a long, harmonious finish that lingers with a touch of spiced oak and fresh herbs. This is Burgundy at its finest—elegant, complex, and unforgettable.
Critical Reviews
This is all dried flowers and spices, making it a unique expression of the Cote Chalonnaise. Made for the ages, but relatively accessible already. Enormously concentrated, but still light on its feet. You really feel that this must have come from a very stony site; those wines can be austere, but this is not. Very limited production. This perfumed red's effusive aromas of sandalwood, tuberose, cherry, pomegranate, blood orange and sweet spices leap from the glass.
