About the Wine

Born in the vibrant city of Paris to parents with a military tradition, Jean-Michel Guillon took a different path. After his service in the Polynesian Islands, he embarked on a remarkable journey into the world of wine. In 1980, he began his wine venture with just over 5 acres of land. Importantly, he apprenticed with the one and only Henri Jayer. Over four decades, he transformed this humble beginning into a sprawling estate that now encompasses 37 acres spread across more than 20 appellations. It's a story of dedication, love for the land, and the pursuit of perfection.

As the years rolled by, Jean-Michel Guillon's son, Alexis, showed a deep passion for the vineyard. He eagerly joined his father in their shared pursuit of winemaking excellence. Alexis spent two years training at the legendary Domaine G. Roumier, one of Burgundy’s most revered estates, where the collectible wines routinely fetch many hundreds to thousands of dollars per bottle. That kind of experience doesn’t just teach winemaking—it shapes a master. Alexis makes more than twenty wines each year, only from plots that the family owns

The Guillon family understands the importance of preserving the environment for future generations of winemakers. In the face of the climate crisis and the depletion of natural resources, they have taken significant steps to reduce their carbon footprint. Their commitment to using environmentally friendly phytosanitary products has earned them the prestigious HVE (High Environmental Value) level 3 certificate in 2015.

Given the domaine's dedication to quality and the favorable conditions of the 2023 growing season in Burgundy, it is anticipated that the 2023 Bourgogne Côte d'Or Chardonnay will exhibit similar excellence.

The Côte d’Or is a narrow strip of limestone-rich soils and perfectly sunlit slopes that shape Chardonnay wines of remarkable elegance, precision, and mineral complexity. This iconic terroir has the capability of producing wines priced at $1,500 and well beyond—each bottle a unique expression of its exceptional depth and aging potential. It remains the unrivaled benchmark for luxury and finesse in white Burgundy.

Aging: Fermented in stainless steel, then aged 16 months in new oak barrels.

Tasting Notes

This Chardonnay offers a delightful bouquet of citrus fruits, notably grapefruit and lemon, complemented by mineral undertones reminiscent of flint and honey.

On the palate, it presents a harmonious balance of crisp acidity and subtle creaminess, leading to a refreshing finish.
