About The Wine

Established in the 1920s by Robert Dauvissat and refined over three generations, this esteemed domaine continues to captivate the palates of wine connoisseurs and critics alike.  

The journey of Domaine Vincent Dauvissat began nearly a century ago, with Robert Dauvissat laying the foundation for what would become a beacon of Chablis winemaking. His son, René, solidified the Domaine's reputation, and today, Vincent Dauvissat carries the torch with unwavering dedication and passion. 

Spanning 30 acres of prime vineyard land, Vincent Dauvissat's holdings are a testament to the unique and coveted terroir of Chablis. The La Forest vineyard, in particular, boasts a perfect southern exposure and Kimmeridgian soil, renowned for producing wines of exceptional minerality and depth. The vines, with an average age of 40 years, yield grapes that are hand-harvested and meticulously selected to ensure only the finest fruit makes it into the bottle.

Vincent Dauvissat's winemaking philosophy is rooted in tradition and respect for nature. Employing sustainable, organic, and biodynamic farming methods, Vincent allows the vineyard to express itself fully. The vinification process is equally careful, with fermentation taking place in a combination of enameled steel vats and aged oak barrels. This approach imparts a subtle complexity to the wine, enhancing its natural flavors without overshadowing them.

Vaillons is a small cru that features 8 distinct lieux-dits. With a predominantly limestone soil base on hard Portlandian limestone, it encapsulates the diversity of Chablis terroir in one appellation.

Eye: Pale lemon-gold with a bright sheen.

Nose: Honeysuckle and white flowers lift over white peach, tangerine and pear, with classic Chablis touches of iodine, crushed stone and a wisp of smoke.

Palate: Generous and textural for Chablis — fleshy orchard and citrus fruit carried on a saline, chalky grip; rounder and more open than its Séchet sibling, closing long, savory and balanced.

Drinking Window: Approachable from ~2027; core window 2028–2040, with the structure to age two decades or more (critic-derived estimate).

What the Critics Said

Reflecting the influence of its deeper soils, the 2023 Chablis 1er Cru Vaillons is, as ever, slightly more forthcoming than Séchet. Tangerine, peach and orange peel introduce the wine, preceding a full-bodied, layered and textural palate. Its generous attack is tempered by tangy acids and a chalky grip that keeps everything in sharp focus. Ample and undeniably charming today, its track record suggests that patience will be amply rewarded as it accrues further complexity with age.
