Dignitat Cava Brut Rosat Seleccio NV

Dignitat has been making Cava in Catalonia's Penedes region since 1920. Fifth-generation winemaker Alex Ruiz-Masachs now runs the estate, carrying forward a century of hand-picked, family-made sparklers.

The Penedes vineyards catch Mediterranean winds that blow northwest over the Montserrat mountains — warm summers, mild winters, and enough sunshine to ripen the traditional Cava trio of Xarel·lo, Macabeo, and Parellada. Rainfall is modest; the fruit concentrates naturally.

This rose is made the slow way: hand-picked fruit, pneumatic pressing with only free-run juice, each variety fermented separately in steel. Second fermentation happens in the bottle, followed by at least ten months on the lees — the contact that builds the brioche and toasted-bread notes you'll find underneath the fruit.

Pale pink. Fresh green apple and pear up front, then dried nuts and fresh bread from the lees aging. Medium structure, good balance between acidity and fruit concentration. The kind of detail and care you'd expect from a wine twice the price.

Perfect for the drinker who knows what real Cava should taste like and refuses to overpay for it.
