About The Wine

Kojima Sohonten has been brewing sake in the Yonezawa area of Yamagata Prefecture since 1597 — four centuries of unbroken production under the Toko brand. This is the kind of continuity that builds mastery into the marrow of an estate.

Divine Droplets represents the pinnacle of the Toko lineup, scored 93 points by critics and singled out by Alder Yarrow of Vinography as "one of the most exceptional sakes made in the world, and one of my personal gold standards for the magical qualities that daiginjo sakes can possess." This is the sake that opened Eric Story's eyes to what boutique sake could be — served with a fish course at the French Laundry, where it remains the house pairing for Oysters & Pearls.

The shizuku free-run drip method is typically reserved for competition-grade sake. Here, the fermented mash is placed into canvas bags and gravity alone slowly drips the liquid free — no mechanical pressing, no force, just time and patience. The sake is brewed exclusively with Dewasansan rice, a Yamagata-native varietal polished down to 50% of its original grain size. The purity of high-altitude snowmelt water from the Japanese Alps lends the sake a silken mouthfeel.

Colorless in the glass, the nose opens with vivid pear and white peach, followed by layers of fresh mint and green apple, with saline and herbal nuances and cool minerality. The palate is clean and crisp with ripe pineapple and melon, mid-palate persimmon and plum wrapped in a chewy, slightly fruity body. White pepper and radish add savory dimension. The finish is long and lifted, carrying delicate minerality and a faint echo of lily and stone fruit with silky texture. Bone dry, with an illusion of sweetness from aromatic qualities. Effortlessly clean, beautifully balanced, and moves across the palate with a slippery texture that trails off with ethereal lightness.
