About The Wine

If you've ever wondered what Champagne tastes like at a Michelin-starred dinner, Essentiel is the answer.

Piper-Heidsieck's chef de cave Emilien Boutillat — the youngest cellar master to ever lead a major Champagne house — takes the same beloved blend as Piper's flagship Brut, ages it longer on the lees, and dramatically cuts the dosage down to 5 grams per liter. The result is the same recognizable Piper-Heidsieck DNA, but drier, more cut, and unmistakably built to pair with food rather than sip on its own at a wedding toast.

Named "Sparkling Winemaker of the Year" by the International Wine Challenge (IWC) at just 35, he has an obsession with balance and precision. His goal? To ensure Piper-Heidsieck remains as fresh, complex, and charismatic as ever.

This isn't a niche house. Piper-Heidsieck has been making Champagne since 1785, was Marie Antoinette's favorite, has been a James Bond mainstay, and is the official Champagne of the Cannes Film Festival.

What's quietly impressive is what they're doing now: Piper-Heidsieck is one of the only major Champagne houses with B-Corp certification alongside dual sustainable-viticulture certifications (VDC and HVE Level 3). Fruit comes from over 50 crus across Montagne de Reims, Vallée de la Marne, Côte des Blancs, and Côte des Bar.

What you'll find in the glass: a bright, structured Champagne with the classic Piper drive — citrus, brioche, and red-fruited Pinot character — but layered with the extra complexity that lees aging brings: roasted hazelnut, quince paste, acacia honey, and a chalky mineral spine that the low dosage lets through unfiltered. James Suckling, Wine Spectator, and Wine Enthusiast all came in at 92 points. The IWSC gave it Gold.

Drink it now alongside roast chicken, fresh oysters, or pan-seared sea bass — or cellar a few bottles; the house says this one will keep developing for up to 15 years.

Pale to medium gold in the glass with a fine, persistent mousse. The nose layers toasted hazelnut, plum, grapefruit, and quince paste over delicate whispers of acacia honey and warm brioche — the Piper-Heidsieck signature, made richer and more savory by extended lees aging.

The palate is broad-shouldered and structured but sleek, with a firm spin of citrus acidity, black currant and red cherry, lemon curd, and a creamy, lightly spiced finish.

The Extra Brut dosage (5 g/L) lets the chalky minerality and a delicate touch of salinity come through unmuted. Long, precise, and built for the table.

I can’t remember if I have ever used the words “Piper” and “under-valued” in the same sentence, but it firmly applies here. To begin, it is rich yet crisp, with metallic minerality but also charming toastiness, has intense bubbles, is long on the palate and has a charming aftertaste. Moreover, the wine seems to pleasantly gain richness after being exposed to oxygen.
