About The Wine

Founded in 1877, Williams & Humbert is one of the oldest and largest Sherry producers in Spain. Based in Jerez, the winery is known for its vast storage capacity, with over 50,000 casks housed in a 400,000 square-foot facility. In 1994, the Medina family acquired the winery, and since 2010, Paola Medina has overseen winemaking.

This wine is made in Jerez, located in the Andalusia region of southern Spain. The region’s unique microclimate and soils, influenced by both the Mediterranean and Atlantic climates, provide ideal conditions for growing grapes for Sherry production.

The solera system is a traditional Spanish aging method used primarily for sherry and some fortified wines. It works like a pyramid of stacked barrels, with the oldest wine at the bottom and younger wines above. When it's time to bottle, only a portion of the oldest wine is removed, then those barrels are topped up with wine from the next level, which are refilled from the level above, and so on, with fresh wine entering at the top. This creates a continuous blend where old wine "teaches" younger wine, ensuring remarkable consistency across years.

The beauty of the system is that some soleras have run for over a century, meaning every bottle contains traces of wine from when the system first began—a living piece of history in your glass.

100% Palomino. Old gold and amber colored wine, very bright. Very pungent, intense, and complex aroma with slight hints of the fino it once was and dried fruits and hazelnuts. Dry, just the right amount of acidity with a lot of body and character, very elegant and persistent on the palate, tremendously expressive on the finish.

The NV Jalifa Rare Old Dry Amontillado Solera Especial VORS has a dry and pungent nose, serious and with more salinity, as it corresponds to an Amontillado with a Manzanilla origin with an average age of over 30 years. I don't see a clear bottling date on the back label, but it's possibly indicated by a lot code. They had to start refreshing it with Fino because Jerez and Manzanilla are two separate appellations. It combines the saline/biological notes with aromas of varnish and hazelnuts. The palate is pungent and concentrated, with 20% alcohol, finishing with a salty and bitter twist. It's long and persistent, with finesse. This is produced at a smaller scale, some 1,000 half-liter bottles per year. ~94 Wine Advocate

Golden brown in color, with smooth, almondy aromas along with apricot, cinnamon and toffee. The palate is full, round, smooth and satisfying, with a fine blend of weight, acidity and prime Sherry flavors. Overall this is a rich, heady style of dry Amontillado that finishes long and secure. ~92 Wine Enthusiast

THE PRODUCER

Bodegas Williams & Humbert

The history of Bodegas Williams & Humbert began more than 140 years ago. They were involved in the creation of the Jerez-Xérès-Sherry Designation of Origin, and today the winery is recognized as one of the most prestigious producers in the world.

Since then, part of the house's wines and brandies have been stored in oak barrels of the highest quality (soleras). These form the basis for the current development and aging of each of the wines and brandies produced by Bodegas Williams & Humbert. In the 1960s, José Medina founded the first winery bearing the same name as its president, which was joined two years later by his brothers Nicolás, Ángel, and Jesús.
