About The Wine

The Avignonesi family has been shaping Tuscan wine since the Renaissance, and their Occhio di Pernice carries a secret that's been passed down for generations: the madre, a living yeast culture that defines every bottle. This is Vin Santo at its rarest — made from Sangiovese instead of the usual white grapes, aged over a decade in small caratelli, watched over by time and tradition.

The math tells you why this exists in tiny quantities. The same fruit that fills one 375ml bottle of Occhio di Pernice could produce twenty-four standard bottles of wine. Grapes wither on reed mats for six months. The dense must spends ten years in oak. More than half the liquid evaporates. What remains is concentration that borders on alchemy.

Dense and mysterious in the glass, with aromas of dried plums, dates, propolis, and spiced gingerbread. Sweet tobacco and malaga in the bouquet. The palate delivers dried apricot, smoked hazelnut, and subtle Christmas spices, finishing with dark raisins, chocolate, and caramel. Creamy toffee notes. The finish stretches impossibly long — candied orange, hazelnut, a wine that shifts with every sip.
