About The Wine

Vin Santo is a deep, enchanting sweet wine, produced by appassimento method, allowing the grapes to hang dry before fermentation to increase sugar and alcohol content. Wine Spectator described the taste of this “holy wine” as “An elegant dessert wine with moderately high acidity, its vivid honey and brown sugar aromas turn to nut and caramel in the mouth.”

In 1983, the Bindella family saw beyond the crumbling walls and abandoned vineyards of Montepulciano. They saw potential—a gem waiting to shine. With passion, dedication, and patience, Vallocaia was transformed into a thriving vineyard, a place where the love for the land and the respect for nature bring forth wines of exceptional quality.

The 2012 'Dolce Sinfonia' is crafted with meticulous care and dedicated to Guiseppe Verdi. The grapes, dried in traditional "penzane," undergo vinification in January following the harvest. They are then nurtured in new 50-litre French oak barrels, where they mature gracefully for at least three years, followed by an additional year in the bottle.

Vallocaia's unique terroir plays a crucial role in shaping the character of this exquisite Vin Santo. The varied soil textures—from sandy to sandy-loamy to clayey-sandy—impart a rich complexity to the wines. The slightly calcareous soils with a moderately alkaline pH, combined with the area's altitude and slopes, create ideal conditions for the Sangiovese grapes to thrive.

This is a very special wine, is limited and allocated, and only produced in exceptional vintages.

Aging: 6 years in French oak barrels.

Tasting Notes: 100% Sangiovese. The nose is remarkably complex and intensely aromatic, with deep caramel, honey and dried orange peel and notes of dried fruit, prunes and caramelized figs; on the palate. It is rich and dense, with a sophisticated elegance and a maple finish that pleasantly balance the sweet sensations. A very long sipping wine. Also excellent with dark chocolate desserts or mature cheeses.

An Occhio di Pernice Vin Santo — Tuscan dessert wine from air-dried red grapes, made only in the best years.

Amber-rose in the glass: dried fig, date, walnut, caramel, and orange peel. Sweet and viscous but lifted by acidity, with a long, nutty, almost saline finish. A classic with cantucci, or on its own.
