Situated between the Côte de Beaune and the Mâconnais, the Côte Chalonnaise benefits from varied limestone soils and a continental climate, which contribute to its distinctive wine profile. 

Defaix Frères, a family-run domaine established in 1955, is located in this esteemed region. Initially focusing on Chablis, the estate has since expanded to include key sites in Rully. Managed by Hélène Jaeger-Defaix and her husband Didier, the estate represents the fourth generation of the Defaix family in viticulture. Known for their commitment to organic and sustainable practices, Defaix Frères achieved full organic certification in 2019. The winemaking approach is characterized by minimal intervention, using natural yeasts and traditional methods to emphasize the authenticity of their wines.

2018 was a great vintage for this region. Wine Spectator blessed this year with a 92 point review and said it delivered "Opulent and open whites."

Tasting Notes

100% Aligoté. Imagine a bright and invigorating burst of citrus and green apple on the palate, complemented by subtle hints of white flowers. The absence of oak lets the natural acidity and minerality take center stage, making each sip a crisp and refreshing experience.
