2018 Topel Winery Cabernet Sauvignon Mendocino County

Most California Cabs under thirty bucks are background noise — soft, sweet, forgettable.

This one isn't. It comes off a mountain in Mendocino, made by a winemaker who trained at Paul Hobbs, and it drinks with a seriousness the price tag doesn't warn you about.

Topel sits at 1,400 feet on the southern edge of Mendocino's Sanel Valley, west of Hopland and flanked by the Yorkville Highlands and Alexander Valley. It's a 160-acre mountain property with only 15 acres under vine — the rest left to oaks, hawks, and rattlesnakes.

The family planted Bordeaux grapes for a reason: this site, sustainably farmed, ripens Cabernet with structure instead of sugar. Winemaker Martin Bernal-Hafner keeps the hand light and lets the hillside do the talking.

The result is old-world in the best sense — dark fruit, violets, a streak of graphite, and tannins built to carry it for years.

Decant it, pour it next to a steak, and watch it outpunch bottles that cost double. This is the kind of find the label doesn't advertise. That's our job.
