2023 Domaine du Cellier Aux Moines Bourgogne Pinot Noir Cuvee Felix Helix Burgundy

Cistercian monks planted vines here in 1130. Nine centuries later, the Cellier aux Moines — the monks' original cellar — still stands. When Philippe and Catherine Pascal bought the property in 2004, it was a neglected house and unkempt vineyards. They hired Guillaume Marko in 2015, a technician trained in biodynamics, and began the transition to organic farming. By 2020, the estate became the first certified organic domaine in Givry. Since 2017, they've farmed biodynamically to rebuild the vitality of the soil.

The winery is fully gravity-flow, three of its four levels underground, built in time for the 2015 harvest. Marko harvests each plot individually — timing can vary by a week — prioritizing physiologic ripeness of tannins over sugar. He ferments whole-bunch, stems and all, the old Burgundian way. This is entry-level Bourgogne Pinot Noir with nine centuries of history and modern precision behind it.

Burgundy Pinot Noir at this price is usually thin and forgettable. This one drinks like something twice the cost — the kind of detail and balance that comes from old vines, biodynamic farming, and a winemaker who doesn't cut corners.
