About The Wine

Billecart-Salmon has been family-owned since 1818, when newlyweds Nicolas Francois Billecart and Elisabeth Salmon founded the house in Mareuil-sur-Ay. Over two centuries later, it remains one of the few major Champagne houses still in family hands — ranked tenth among the grandes marques and awarded two stars by La Revue du vin de France.

This Demi-Sec was created for drinkers who want the house's legendary finesse with a touch more richness. It's built on the same base as their Brut Reserve — 40% Pinot Meunier, 35% Pinot Noir, 25% Chardonnay — but finished with a higher dosage that brings forward orchard fruit and honeyed depth without tipping into cloying sweetness. Supplies are limited and only available in select markets.

The house is known for slow, low-temperature fermentation and a double debourbage clarification process at 40°F that enhances purity and finesse. Every vineyard and grape variety is vinified separately, then blended with obsessive precision. Entry-level cuvees rest 30 months on lees; vintage bottlings can age over a decade before release.

In the glass: straw-yellow with fine, persistent bubbles. Aromatic Pinot Meunier leads with redcurrant and chalky minerality, layered with ripe pear, yeast, and a whisper of spice. Round and fresh on the palate, creamy texture, juicy orchard fruit and melon, a touch of bitter peach pit on the finish. Mineral-driven, crisp, structured — fleshy and broad but never heavy. The kind of Champagne that makes you rethink what demi-sec can be.

CRITIC REVIEWS

What the Critics Said

(made with the same blend as the Brut Reserve, with a 42 g/l dosage; L419131 09176M): Light yellow. Aromas of poached pear, honey and buttered toast, plus a hint of white peach that gains strength with air. Fleshy, broad and appealingly sweet but in no way cloying, offering juicy orchard fruit and melon flavors and a touch of bitter peach pit. A buttery quality comes up on the finish, which clings with strong fruity intensity. I imagine that this opulent, fruity but focused Champagne would do wonders with practically any cheese out there, especially salty, washed rind and blue versions. ~91 Vinous Media
