Meet Simone, the heart and soul of Cava d’Onice. His love for wine started when he followed his father through the cellars and began learning the art of vine cultivation at just 14 years old. Despite starting small, this family-run winery has grown over the years, gaining worldwide recognition and acclaim.
Cava d’Onice's story is one of determination and passion. In the early '80s, Simone's father, Valter Nannetti, purchased the "Colombaio" farm, which included a small vineyard of just 2000 square meters. What started with a single vineyard and a mere 266 bottles has now become an esteemed winery known for its dedication to crafting exceptional Brunello di Montalcino.
In 2005, Simone and his wife expanded their horizons by renting a small vineyard, marking the birth of the renowned Cava d’Onice Brunello. The name pays homage to the Etruscan onyx quarry in Castelnuovo dell’Abate.

These main vineyards, located near the Basilica dell’Osservanza, are surrounded by historic wineries that have played a big role in the history of Brunello di Montalcino. Some well-known names like Tenuta Il Poggione and Castello Banfi are among them.
Aging: 3 years in Slavonian and French oak barrels.
Tasting Notes: 100% Sangiovese. It offers an intense aroma with hints of red ripe fruit like plum and blueberry, mingling with complex mineral and balsamic notes. On the palate, it's beautifully balanced with a solid, harmonious body. The tannins blend seamlessly with other elements, leaving a long-lasting finish. It pairs wonderfully with dishes like pappardelle di lepre, risotto, game stews, braised meats, and aged cheeses.
Pure energy in this exciting red with notes of red flowers, cedar, grapefruit juice, and lime. The sensorial complexity is beautiful and takes advantage of the presence of fresh ginger which gives intensity and precision to the matrix. The Cava d'Onice 2015 Brunello di Montalcino Sensis is a dark and fleshed-out steak wine that shows a dense core of fruit framed by those standard Sangiovese-driven aromas of tilled earth, leather, and tobacco. I feel like the bouquet is not fully focused, as those aromas sort of fall into place in random order.
