About The Wine

Fasoli Gino has been working Veneto since 1925 — and went fully organic in 1979, when the second-generation Gino Fasoli developed a chemical allergy and decided the vineyards had to change. By 1984, the estate had committed to organic principles across the board.

Today, they're the only biodynamic producer in the region, a century-old family operation that's spent the last forty years proving you don't need shortcuts to make honest wine.

This is Cabernet Sauvignon built like an Amarone. The grapes undergo appassimento — dried on special trays in a cool environment for 50 to 60 days — concentrating sugar, tannin, and flavor before fermentation. Then it ages a minimum of 36 months in barrique, pulling warmth and structure from the wood without losing the fruit. It's the kind of winemaking that takes patience and floor space, and it shows in the glass.

Deep ruby, opening on tobacco, coffee, and black pepper, with plum, jam, spices, and eucalyptus filling out the bouquet.

The palate is warm and delicately tannic — vinous, clean, with a finish that's both sweet and firmly structured, trailing a spicy edge. Blackcurrant and plum carry the core, backed by the kind of tannin that makes you want food on the table.

A century-old biodynamic estate, Amarone-method concentration, and three years in oak.

CRITIC REVIEWS

What the Critics Said

Blackcurrants and berries on the nose, together with herbs and something like hot sand. Full-bodied, round and silky with firm tannins that pull on your mouth through the finish. But there’s a tight bead of fruit and savory notes pushing through, too. Give this another year or two to allow the tannins to soften. From organically grown grapes. Vegan. Shows excellent promise. The label says 17% vol but you wouldn’t guess it. Try from 2024. ~93 James Suckling

THE PRODUCER

Fasoli Gino

Founded in 1925 in the heart of Soave, Veneto. Agricultural journey began in 1921 when Amadio Fasoli chose to focus on viticulture in the Illasi Valley, east of Verona. First sales invoice issued in 1925 to the parish priest. Second generation led by Gino Fasoli expanded vineyard area and wine production throughout Verona. Third generation transitioned to organic farming in 1979 due to Gino's allergy to chemicals. Since 1984, Fasoli Gino has upheld organic winemaking and viticulture principles. Stands as the sole biodynamic winery in the region, pioneering this approach for over a decade. In 2025, marks a century of winemaking, evolving from traditional producer into pioneer of organic and biodynamic viticulture. Fasoli Gino was founded in 1925 in the heart of Soave, Veneto.
