Domaine Castelnau sits within centuries-old walls halfway between the Mediterranean and the Massif Central foothills, where Beatrice and Christophe Muret farm clay-limestone hillsides at 5,000 vines per hectare. The grapes are hand-harvested, fermented in stainless, then finished with a few months in quality oak — enough to add structure without burying the fruit. The moderate scale lets the entire process stay hands-on, and it shows in the glass.
