About The Wine

The chilled red trend has produced a lot of forgettable wine. This is not that. Destinata is Tooth & Nail's answer to Beaujolais Nouveau: native yeasts, minimal intervention, zero additives, whole-cluster carbonic fermentation. The Carbonic Grenache is the label that built the line's reputation — the 2021 vintage earned 93 points and Editors' Choice from Wine Enthusiast. The 2023 comes from Brave Oak Vineyard in Paso Robles and follows the same playbook: make something fresh, pure, and alive. Pour it slightly chilled and drink it tonight.

Carbonic fermentation is not a gimmick — it's one of the oldest winemaking techniques in the world and the foundation of Beaujolais-style winemaking. Here it works like this: whole clusters from Brave Oak Vineyard, harvested on October 4, 2023, were loaded into stainless steel tanks pre-filled with carbon dioxide. The CO2-rich environment triggers fermentation to happen inside each individual berry, producing wild esters and aromatic compounds that conventional fermentation can't replicate. After 10 days, the tanks were pressed and the wine finished in neutral French oak with lees, then aged five more months in concrete before being bottled unfined and unfiltered. No shortcuts. No additives. Just grape and technique.

The result is a Grenache built for immediate enjoyment — fresh red fruit, cinnamon warmth, a silky midpalate, and the kind of lifted finish that makes you reach for the glass again.

It's not a brooding, structured Paso red. It's lighter, brighter, and better for a Tuesday than a dinner party argument. Slightly chilled in summer, room temperature in fall. Pairs with anything from a charcuterie board to gazpacho to nothing at all.
