About The Wine

Hell Hollow earns its name. Steep, stubborn, unforgiving — nothing that grows there has it easy, and the wine takes after the place. This is Stags Leap District fruit at its most honest: rocky, sun-drenched hillsides that force the vine to work for every cluster, and a wine that never lets you forget it.

Cabernet without apology. Black plum sits at the center, dark and concentrated, pushed against crushed rock and a streak of wild sage that cuts through and keeps it honest. Structured and unyielding on the palate: firm tannins, focused acidity, and a finish that holds its position long after the glass is down. This isn't a wine built to flatter on first sip — it's built to be remembered.

Dylan's Ghost has quiet roots. It was started by Joseph Carr — the same man behind Josh Cellars, one of the best-selling wines in America — as a smaller, personal project alongside the bigger brand. A few hundred cases a year, sold quietly, never chasing volume. Then it went dark. No new vintages, no updates, the kind of label that just fades from view.

Now it's back, in the hands of winemaker Robert Smith. Smith crafts the wines at Quixote — the Hundertwasser-designed estate in Stags Leap District, one of the most architecturally singular properties in Napa Valley — where he works alongside consulting winemaker Philippe Melka on Cabernet grown on organically farmed, estate-only fruit. It's exacting company: Quixote wines are made in tiny quantities and built for those who take structure and terroir seriously.

That same discipline shapes Hell Hollow. What Smith says he's after is tension, texture, and a sense of place that hasn't been smoothed away. That's a fair description of what ended up in this bottle.
