Since 1912 the Osborn family have tended vineyards in McLaren Vale, South Australia. Today fourth-generation family member, Chester, makes distinctive wines using traditional methods both in the vineyard and the winery. Every vineyard has a personality Chester encourage to flourish with minimal intervention in the vineyard and winery. Through time-honored techniques such as open fermentation, foot treading, and basket pressing, this personality is allowed to shine! Small batches of grapes are gently crushed and then transferred to five-ton headed-down open fermenters. These batches remain separate until final blending. Foot treading is undertaken two-thirds of the way through fermentation. The wine is then basket pressed and transferred to a mixture of new and used French oak barriques to complete fermentation. The barrel ferments are aged on lees, there is no racking until final blending and no fining or filtration.
Tasting Notes: Allow a few minutes in glass for the full array of aromas to evolve. Over the course of this period, your sense of smell will be led from savory, cedar, cigar box, sage, oregano, and ferrous notes eventually through to lifted violets, blackcurrant, boysenberry, mulberry, mint, and citrus peel. The palate will similarly start out reasonably tight but will open generously, presenting opulent fruit on the attack, matched with a medium-bodied mid-palate and complemented and drawn out through ripples of fine, chalky tannins.

An attractively floral cabernet with violet and dried-rose notes, as well as dried leaves, forest wood, mint, and wet earth. The fruit sits in the blackcurrant, blueberry, and purple-cherry zone. A succulent palate with ripe but fine, long tannins, carrying plenty of purple and blue-fruit flavors. Classically Australian in character and delivered with an impressive eye to elegance.
