About the Wine
The Levasseur family estate, founded in 1944, is located in the Vallée de la Marne, where David Levasseur cultivates 4.2 hectares of vineyards across Cuchery, Fleury-la-Rivière, and Châtillon-sur-Marne. The vines thrive in clay-limestone soils, which contribute to the wine’s structure and minerality, while the cool climate of the Marne Valley helps preserve freshness and acidity. Divided into 18 distinct plots, these vineyards reflect the diverse terroir of the region.
Since taking over in 2003, David Levasseur has pushed boundaries while honoring family tradition. He was the first producer in Champagne to earn HVE (Haute Valeur Environnementale), Terra Vitis, and Viticulture Durable certifications before transitioning to organic farming in 2020. His meticulous approach in both the vineyard and cellar results in expressive, terroir-driven Champagnes.
Extrait Gourmand Brut Rosé is a bold and layered Rosé Champagne, blending 50% Pinot Meunier, 30% Chardonnay, and 20% Pinot Noir. A portion of the Pinot Noir is vinified as Coteaux Champenois red wine, enhancing its depth and vibrant fruit expression. This rosé strikes a perfect balance between freshness and richness, offering bright red berry flavors, a creamy texture, and a long, silky finish.
Aging: Aged on lees for a minimum of 24 months before release.
Tasting Notes
50% Pinot Meunier, 30% Chardonnay, 20% Pinot Noir. A striking pale pink hue introduces this refined rosé Champagne. The nose bursts with ripe strawberries, crushed raspberries, and hints of redcurrant, underscored by delicate floral aromas. The palate delivers a luscious strawberries-and-cream richness, balanced by crisp citrus zest and subtle minerality. A fine, persistent mousse enhances the wine’s silky texture, leading to a vibrant, mouthwatering finish.

The NV Brut Rosé Extrait Gourmand is a blend of 50% Pinot Meunier, 30% Chardonnay and 20% Pinot Noir, 14% of which was vinified red to lend color. An initial smoky reduction relaxes into appetizing berry notions that reference raspberry and crushed strawberry. The palate is even bolder, showing gentle red cherry and dispersing these flavors with delicate, soft, frothy foam, giving more glimpses of raspberry and alluring freshness with a prompt finish.
