A diferencia de lo que podríamos pensar, el vino en México tiene una larga historia que contar. 

Nos remontaremos hasta antes de la conquista Española, donde ya existía la uva de mesa y era consumida por los pueblos nómadas como los purépechas, mexicas, otomíes, tarahumaras y más.

 

La “Vitis Vinífera” o mejor conocida como la uva de vino, fue introducida por los conquistadores. Los misioneros religiosos se dedicaban a producir vinos para consagración y vinos fortificados a partir de una uva llamada “Misión”.

Podemos considerar a Hernán Cortes como el principal promotor e impulsor del vino en México. 

El ordenó la plantación de Vitis Vinífera en el país, de hecho, el 20 de marzo de 1524, Hernán Cortés firmó un decreto donde se ordenaba que todos los españoles debían plantar anualmente mil viñas españolas y autóctonas por cada cien indígenas a su servicio para lograr una hibridación rápida en las nuevas tierras.

Así fue como la vitivinicultura se empezó a expandir a lo largo del Nuevo Mundo, siendo México el lugar donde se plantaron las primeras vides.

La primera vinícola de la que se tiene registro en todo el continente americano y que hasta hoy en día sigue operando es Casa Madero que se encuentra en Parras Coahuila, México. 

Casa Madero fue fundada en 1597, gracias a la Corona Española, el cual permitió su establecimiento, según información  documentada dentro del Libro de las Mercedes, y como dato curioso, las etiquetas de Casa Madero tienen extractos de este libro. Para conocer más de Casa Madero, checa este VIDEO.

A pesar de que ya existía el vino en México, las bodegas producían vino de mesa, vino para destilar (como Pedro Domecq) y vino de consagración.

Otros dos importantes referentes en la industria del vino en México son:

  • Bodegas Santo Tomas, la cual fue fundada en 1888 es la primera vinícola de todo Baja California.
  • L.A. Cetto, también ubicada en Baja California, se fundó en 1928, es reconocida por ser la empresa más importante de México en cuanto a cantidades de producción. 

No fue hasta 1980 que se empezó a apostar por la calidad en el vino, gracias a la visionaria Vinícola Monte Xanic ubicada en Baja California. Esto fue realmente un parteaguas ya que a partir de este punto, las vinícolas que ya existían, empezaron a producir vinos de mayor calidad.   

 

Importantes Estados Vitivinícolas:

Baja California

Al norte del país, frontera con California USA y ubicada en la franja del vino, se encuentra la región donde se produce más del 85% del vino Mexicano. Tiene un clima mediterráneo con inviernos fríos y veranos cálidos y un marcado  diferencial térmico entre noche y día.  Aunque el Valle de Guadalupe es la subregion más famosa y conocida, existen otras como: Valle de Ojos Negros, Valle de Santo Tomás, Valle de San Vicente, etc. 

En los últimos 15 años, Baja California tenía aproximadamente 12 vinícolas constituidas. Hoy día, Baja California tiene más de 200 vinícolas. La más antigua de esta región es Santo Tomás, fundada en 1888. Algunas de las más conocidas e importantes son: 

LA Cetto, Bodegas Santo Tomas, Monte Xanic, Magoni, Adobe Guadalupe, La Carrodilla y la Lomita, Chateau Camou, Vena Cava, El Cielo, Montefiori, Casa de Piedra, ¡y más!

Coahuila

Este estado es el segundo en mando en cuanto a cantidad de producción. Su ubicación en el altiplano con un clima semi-desértico permite experimentar con diferentes variedades de uva. 

El Valle de Parras es la subregión más conocida y Casa Madero es la vinícola más antigua de toda América que actualmente sigue operando. Parras ha crecido poco a poco y hoy en día, se conocen más de 18 vinícolas en esta región, algunos ejemplos son: Viñedos Don Leo, Rivero González, Parvada, entre otras.

Querétaro

Querétaro es el tercer estado principal en la producción de vino en México. Esta región es conocida por su producción de vinos espumosos y excelentes blancos gracias a la altitud de 2,000 msnm, sus condiciones climáticas semi-secas y con diferenciales térmicos. Algunas subregiones son Tequisquiapan, Ezequiel Montes, El Marqués y San Juan del Río.

Una de las vinícolas más importantes en esta región es Finca Sala Vivé de la reconocida vinícola productora de espumantes en Cataluña: Freixenet.  Algunas otras bodegas importantes son: La Redonda, De Cote, El Marqués, entre otros.

Guanajuato

Se dice que fue en Guanajuato donde se plantaron las primeras vides de todo México, pero no fue hasta hace algunos años que esta zona empezó a posicionarse en el mapa del vino Méxicano. Algunas de las vinícolas más importantes son Cuna de Tierra, Dos Búhos, Cava Garambullo, Viñedos SMA entre otros. 

Esta región es conocida por tener excelentes proyectos enoturísticos e inmobiliarios con viñedo.

San Luis Potosí

Este estado ubicado en el centro de México recientemente ha empezado a producir vinos de gran calidad. Aunque aún existen muy pocos productores, empiezan a posicionarse y a ser reconocidos en el país. La principal vinícola en esta región es Cava Quintanilla.

Chihuahua

Ubicado al norte del país, es una de las regiones con mayor potencial del país. Aunque la uva llegó a esta región desde 1940, permaneció fuera de foco durante muchos años y fue a partir del 2009 que se retomó la industria vitivinícola, hoy en día, tenemos excelentes ejemplos como Viñedos Encinillas y Bodegas Penisque.

Nuevo León

Una de las regiones más nuevas productoras de vino. Ubicada al pie de la Sierra Madre. Las uvas emblemáticas de la región son Cabernet Sauvignon, Misión, Merlot y Shiraz y la principal vinícola es Vinícola Maravillas.

Zacatecas

Este estado es productor de vino desde 1980, pero hasta hace algunos años han empezado a producir vinos de mayor calidad. Empieza a posicionarse cada vez más en el mapa del vino mexicano y la bodega más conocida de este estado es Tierra Adentro.

Aguascalientes

Esta región empezó a cultivar la vid desde el siglo 16. De hecho, era reconocida por producir en gran cantidad, al igual que por el cultivo de uva de mesa.  En 1936 llevaron vides de Coahuila a esta región y empezaron a apostar más por la calidad. Los principales productores son Santa Elena, Contempo, Garza & Pimentel, Renacimiento.

  

El Mexicano y el Vino

El mercado Mexicano se encuentra en constante crecimiento.

Según la OIV, en 2018, el consumo de vino anual per cápita en México es de 1 litro. En comparación con Francia, el consumo de vino per cápita en ese mismo año fue de 50,2 lts. y EUA 12,4 lts. México está muy por debajo del promedio. Sin embargo, las ventas de vino en México han crecido en promedio un 8% anualmente. 

El 56% de los mexicanos prefieren el vino tinto.

Crecimiento del Vino Mexicano

A pesar de que la industria vitivinícola en México sigue siendo joven, está en constante crecimiento y evolución. Cada vez más, empresarios aventureros y soñadores apuestan por el vino. Cada vez es más común encontrar vinos de excelente calidad y galardonados. 

Poco a poco, la industria enológica y enoturística de México se ha convertido en un referente a nivel mundial. Con el aumento de turistas en México (y enoturistas), la globalización, y la importación de vinos de todo el mundo, los consumidores Mexicanos tienen cada vez más opciones. México ya no es solamente un país tequilero y cervecero, ¡Ahora también es un país consumidor de buenos vinos!
