The 'Castle of the White Horse' sits at the very peak of the Saint Emilion classification, from where they create one of the world's first class wines.
Chateau Cheval Blanc is first and foremost an exceptionally rich terroir featuring a patchwork of different soils. From its position between Saint Emilion and Pomerol, in the heart of the Bordeaux vineyards, the estate has established its identity through the gravel and clay soils which are closely interwoven over the 45 parcels that make up the estate.
Sharing a common border with the estate that produces the most expensive wine in the world, Chateau Petrus, Chateau Cheval Blanc has produced wines since 1832. The Laussac-Fourcaud family bought the land estate from Chateau Figeac, a large wine growing estate with hundreds of years of history in winemaking.
The family began producing unique wines that won medals in the 1862 London Exhibition and the 1867 Paris Exhibition, winning worldwide acclaim. In 1955, Chateau Cheval Blanc received its Premier Grand CruClassé (A) designtation, and Belgian businessman Albert Frère purchased the estate from the Laussac-Fourcaud family in 1998. Frère currently owns two top level Bordeaux estates, Chateau Cheval Blanc and Chateau d'Yquem in Sauternes.

Food Pairings And Serving
This wine pairs lovely with fish such as monkfish, cod and turbot, mushrooms and aged cheeses. This wine is best served at 15.5 degrees Celsius, 60 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift.

The beauty of Cheval Blanc can be found in the complex and powerful perfume entwining textures that can feel as sensual as silk and as soft as velvet. The wine is incredibly opulent, yet light on its feet.
There is a lot of depth here. The fruit comes in layers that alternate between earth, red berries and black fruits. There is intensity and elegance, with a unique fleshy sensation due to the large percentage of Cabernet in the blend. You will want to age this for at least 15 years before popping a bottle.
Actually, you can drink it young, but it is one of the longest-lived Bordeaux wines being produced, so try to be patient. This wine has been given has been given much critical praise and truly a masterpiece.
