Wine & Dip Pairings

Nobody plans the wine for the dip. That's the mistake.

The dip is what people actually eat at a party.
So I matched six of them to six wines, and pulled bottles from our own racks for each.

Buffalo Chicken · Spinach-Artichoke · Queso · Guacamole · French Onion · Salsa

Buffalo Chicken Dip + Off-Dry Riesling

Heat needs a little sugar.
A touch of sweetness in the glass calms the hot sauce, and Riesling's acidity cuts the cream cheese and blue cheese.

Our Riesling rack runs from bone-dry to sweet. For this dip, start with the Kabinetts — the lighter German style that usually carries a little sweetness.

Spinach-Artichoke Dip + Sauvignon Blanc

Artichoke is the vegetable that trips up most wines.
Sauvignon Blanc doesn't flinch.

Its green, citrusy edge lines up with the spinach and slices through the melted cheese. Loire if you want it lean, New Zealand or California if you want it louder.

Queso + Cava

Melted cheese coats your mouth. Bubbles scrub it clean.

Cava is Spain's traditional-method sparkling: the second fermentation happens in the bottle, the same way Champagne is made. Ours start at $21.99.

Guacamole + Albariño

Guac wants lime. Albariño brings it.

Citrus, a salty snap, nothing heavy. It comes from Rías Baixas on Spain's Atlantic coast, and to me it tastes like it.

French Onion Dip + Chardonnay

Caramelized onions and sour cream are rich and a little sweet.
Chardonnay has the weight to stand next to them.

Like it leaner? Go unoaked Burgundy. Like it rounder? Go California. The Sospiro is from my own winery, so yes, I'm biased.

Salsa + Dry Rosé

Tomato has more acid than people expect, and it flattens soft wines.
Dry rosé keeps up.

Bright, a little red-fruited, served cold. It's also the bottle I'd pour with every other dip on this page.

Wine & Dip FAQ

What wine goes with spicy dips?

An off-dry white. A little sweetness calms chili heat, which is why off-dry Riesling works with buffalo chicken dip.

What is one wine that works with every dip?

Dry sparkling or dry rosé. Both have the acidity to handle cheese, tomato and spice. If I'm bringing one bottle, it's one of those two.

Can I serve red wine with dips?

Yes. Keep it light and low in tannin, and serve it slightly cool. Heavy, tannic reds clash with chili heat.

What wine goes with cheese dips like queso?

Sparkling wine. The bubbles and acidity cut through melted cheese, so each bite tastes like the first. Cava is my pick.

How cold should I serve these wines?

Whites and rosé cold from the fridge, around 45–50°F. Sparkling a few degrees colder.

Put the dip out. Open something cold. That's the whole plan.
