Este es un platillo muy rico, fácil de hacer y es apreciado en todas las cocinas Latino Americanas. El pastel de carne es un plato cuyo ingrediente principal, obviamente, es la carne.

El pastel o pan de carne tiene una forma de salchichón compacto, a veces rectangular. Suele cocinarse al horno y comerse tanto caliente como frío, tipo fiambre. Es un plato extremadamente dúctil y versátil. La carne para este platillo, consiste en carne trozada o molida, puede ser de vaca, ternero, cordero o cerdo y a veces una combinación de algunas de ellas, por regla general se mezcla  con migas de pan o cereales para que la pasta sea más consistente, se suele cubrir con huevo para que mantenga una forma más homogénea tras la cocción. Se puede rellenar de verduras picadas, queso y huevo cocido y se considera un plato mundial, pues en casi todas las cocinas del mundo hay un platillo con características similares.

Con los hermanos Ticos hay un platillo similar que se le conoce como “Arrollado de carne” y en Chile y en México como “Niño envuelto”; sin embargo, hoy nos vamos a ir con una receta típica de nuestros hermanos argentinos. En España también tienen su pastel, aunque este se hace de liebre y es conocido como pastel de liebre, fue muy famoso y socorrido a finales del siglo XIX y hasta mediados del siglo XX.

Si hay un alimento que los argentinos adoran es la carne. De hecho, las mismas estadísticas nacionales lo dicen: Se calcula que se consumen más de 100 kilos anuales ¡Per cápita!, es por ello que en el suelo argentino abundan las recetas con la carne como elemento protagonista y obviamente la receta del pastel de carne es de las favoritas.

La Receta

En Argentina es un clásico del día a día, por su versatilidad y facilidad para acompañar con cualquier tipo de guarnición. Para los amigos argentinos la preparación de productos con carne es todo un ritual. Existen quienes le ponen un poco de esto y otro poco de aquello, más pimienta y menos sal…Como sea,  trataremos de encontrar una idea general que nos sea fácil seguir y probar en casa.

Empecemos con lo básico, la carne. Sería sensacional que tuvieran un carnicero de confianza, que sea amigo y ustedes sus clientes, para tener una carne buena picada y sin mucha grasa, entre más magra es mejor pues así le podemos dar el sabor que queramos. En este platillo, si hay mucha grasa en el picado de la carne, se tendrá un gusto a “trapo mojado” que será muy difícil de eliminar, por más especias que utilicemos.

Ahora sí, a lo que vinimos, ¡La preparación!

Ingredientes (para 8 personas):

  • 1 kg de carne picada
  • 2 cebollas medianas
  • Un poquito de perejil
  • 1 zanahoria
  • 1 pimiento rojo
  • 2 huevos
  • 100 gr de queso rallado
  • 4 cdas de pan rallado
  • 1 cda de mostaza
  • Sal
  • Pimienta
  • Aceite de oliva

Preparación:

  1. Lo primero que vamos a hacer es ir por los vegetales: Rallamos la zanahoria y las cebollas. Picamos el perejil finito, chiquitito y cortamos el pimiento rojo en cubos pequeños.
  2. Antes de cocinar nada vamos a prender el horno así lo pre calentamos: 190°c / 374° F.. Asegúrense de calentar el horno.
  3. Ponemos la sartén al fuego y cuando tome temperatura le ponemos un poco de aceite de oliva y doramos la cebolla, el pimiento rojo, el ajo y la zanahoria. Condimentar a gusto.
  4. En otro recipiente colocar la carne y le agregamos los huevos, el queso rallado, las verduras cocidas, el pan rallado, la mostaza, el perejil y sazonar al gusto  con la sal y la pimienta.
  5. Llegó la hora de amasar todos los ingredientes hasta tener una mezcla homogénea y compacta.
  6. Para llevarlo al horno hay dos opciones: la primera es rociar con aceite una fuente para horno y expandir la mezcla en ella (unos 3 dedos de alto de mezcla más o menos) o ponerlo en una budinera.
  7. Cocinar el pan de carne en el horno precalentado durante aproximadamente 1 hora. Para desmoldarlo hay que esperar que repose un poquito luego de que esté listo. Puedes acompañarlo con lo que quieras.
